I didn't want to believe it but the stretch and fold method is really superior to kneading. My KitchenAid is collecting dust.
I've always gotten better gluten development by kneading to the point of choosing to do it stretch and fold even though I don't have a mixer. Stretch and fold is still fine and good enough for square thicker pizzas.
