I didn't want to believe it but the stretch and fold method is really superior to kneading. My KitchenAid is collecting dust.

Yeah I've done full-on no-knead doughs before and they're good but doing a couple stretch and folds every 30 minutes is not that much more effort and you can have good 'za on the same day.

I don't do anything. Just put flour water salt in a jar and leave it for 8 hours. When I come back, the dough is risen and bakes into a satisfying muffin.

i usually do 8 hours rises so i just prep the dough the night before if i want to bake in the morning, or prep in the morning for baking that evening. i've never done the multi day steps in the refrigerator.
