They're easy to get good enough and even if you fuck up it's still an omelette. They're hard to get perfect.

I let mine set a little because I don't like them quite as runny as is classic. So you don't *have* to shake the *whole* time. But you will see practiced cooks just sort of shake and scramble and bang and roll and boom they have an omelette. It's pretty impressive.

I just get my butter foamy on low heat, pour in the eggs, let em settle for a minute, season and slowly roll. Works for me and it's still pretty creamy inside.

I don't shake, I just tilt so the runny parts to cover the bottom of the pan in the initial scramble and use the spatula to spread. They're very easy to make and delicious
