My first attempt at nachos. I used ground beef with the Ortega seasoning, a "mexican blend" of shredded cheese, Pace salsa, and Valentina hot sauce. Kind of a hassle but tasty. How do you do your nachos? What would you add or change here?

>>22025915Homade tortillas are a bit much but I agree with you that a homade salsa is necessary and incredibly easy to make. Deep or shallow frying tortilla triangles for fresh chips is a lot of mess and fussing. Making a fresh salsa takes no time and the only mess is rinsing off the knife and cutting board.

Chips and salsa are the Mrs.' favorite snack and when there's only crumbs left in the bag, I snatch um and save um when she tries to throw them away. 2-3 crumb bags and it's time to get to work. Like the other anon said, layering is import but foil is bullshit. When they start to get stuck to the foil it completely ruins them. Get a good non-stick and scrape and slide them off onto a plate or put the whole pan on a cutting board and take it with you to enjoy.The way we cook, is we find meat on sale and make a few portions of it. Like, if chicken is on sale we'll make it all, have some for dinner that night and put the rest away to season and eat with different sides another night. I'll grab whatever meat we made that week and shake it in one of those plastic yellow, green, or black lid deli salsas that are almost gone. (we always have like three) She doesn't really like spicy so it's mostly tomatoes. Now you don't need to cut tomato and it keeps the nachos warmer longer! When they're done, i like to add a little shredded lettuce, another small layer of cold cheese ( never buy pre shredded cheese) and then I top with a little bit of Tapatio or another option that's popular in the thread: Taco Bell sauce
>>22025605I'd add some other type of meat. i usually order (pic rel) most days for a big lunch that i get leftovers for part of my dinner. i eat the rolled tacos and keep the carne asada burrito to empty onto a plate of chips and salsa for dinner... get a costco chicken or a shipolte bowl dump it on the chips... its smackin'
