I have been trying to eat more vegetables. I was never really against vegetables but I would always eat them roasted or something. and usually not very many. I tried a basic salad the other day and it made me want to kill myself. I ate it and felt full I guess but I didn't feel excited to eat it or even happy to eat it. I am also autistic and certain food textures give my mind a lot of happiness I guess. For example, I love soggy cereal or soggy graham crackers soaked in milk or almond milk or something. However, cereal probably isn't super healthy and graham crackers probably also are not healthy? Just not sure what I can do. How do you normally eat your vegetables? Do you eat enough vegetables? I fucking hate salads man if I am being real with myself. But I eat them anyway because I want to be healthy.

let me open your mind to the greatness of a soggy crouton, my friend.
what you wanna do is load your salad with sweet and flavorful things of different textures, like fresh shredded carrot, red onion, blue cheese, raisins, etc. then you wanna put the croutons on there and the dressing and toss it all up so the dressing is coating everything.
then you let it kinda sit for a couple minutes. let those croutons soak up the dressing like a sponge. when you eat them theyll be a little crunchy but have some softness from the wet.
this is how salad taste good.

there are soo many kinds of salads, you just have to find a couple that you like. not all salads are just big bowls of leafy greens. try a greek salad, a beet salad, or a bean salad. try adding nuts, herbs, fruits, eggs. make your own dressings. there's almost infinite possibility, you just gotta dial in how you like it.

if you really can't get into salads, just cook your vegetables. roasted vegetables are not any less healthy than a salad, why would they be? or sautee them in a bit of butter and lemon juice, steam em and toss em in sauce, make a vegetable soup or stew, make a quiche, or a stir fry...there's so many ways to eat vegetables.

boiling can remove certain nutrients from certain veggies but it doesn't render them nutritionless gruel by any means, but it depends. boiling potatoes removes a lot of potassium, so that may or may not be a good thing depending on your diet. for most people it's probably better to roast them to get the full amount. but that's just one example

Kale & Arugula. Former has the K2 in spades. If you want to get fancy, flash steam-blanch for 20s (like green teas are to lock in the good stuff). Have sweet white onions for texture. Do simple olive oil or vinagrette.

Boiling and baking veg is trivial. Things like Asparagus are fast in a pan. Peppers grill up quickly if doing meat, and will have about the same time as a lot of baked fish.

that said you don't need to eat them raw or in a salad. Some vegetables do lose some of their vitamins under high heat but you can easily get them from other sources.
There are plenty of meals that use lots of vegetables and are also delicious like:
Lemon pasta with kale.
Peanut butter pasta with vegetables. Any veggie tastes good when it's covered in that peenut sauce.
frittata.
loaded sweet potato.
mexican style corn in the microwave.
pico de gallo. It stays good for a couple of days in the fridge and it's so good almost any savory meal.
tuna salad

You can just google "[vegetable] lose nutrients when cooked" and there'll be plenty of easy to read articles from good sources.
For most vegetables, steaming and microwave is the healthiest way to cook them. Then boiling but since the nutrients leach into the water it's best to cook them in soup so that you end up drinking them anyway.
Lettuce for example is fine if you add it to the pan as you're finishing cooking other foods. It'll wilt and lose most of it's flavor but still retain its nutrients.

You could try to make salad from roasted peppers, just roast them nice till their skin is black, place them in bowl and cover with some plastic so they peel easily. Clean them chop them up, maybe add some celery, dill, vinegar, you name it. Or you could go the good old cucumber, tomatoes and cheese, but this one isn't as soggy so you might not like the texture. Or maybe you could try to chop cabbage really fine, add salt and vinegar, and then to squeeze it a bit, it would make it more soggy.

In poland we have mizeria, it's pretty good https://en.wikipedia.org/wiki/Mizeria And this pic related vinegar jar salad which I don't think has any official name. You put slices of various vegetables in a mix of water, vinegar and some sugar and let it stay in basement for weeks or months and it comes of really juicy and soft.
Other than that, I generally hate salads. I much rather eat raw carrot, radish, cucumber, tomato and lettuce. I don't get salads, they ruin the taste and experience by adding random shit and sauces aka dressing. Just eat the raw veggies. Or make them part of the dish, be it a soup, stir fry noodles, curry, etc.

A salad is just a salted dish. You can have a meat salad, a fish salad or a vegetable salad. You can have it cold, lukewarm or hot. It's the oldest dish around. You can find it in Ancient China, Egypt, Greece and Rome.

You don't need leafy greens. There are plenty of potato salads in Germany. You don't need dressing or sauce. It's basic ingredient + salt.

The key to a good salad, is getting both the salt and the basic ingredient right. There are different tiers of salt, from Japanese to Trapani, then Norwegian, then French and British sea salt. Himalayan and kosher salt are irrelevant.

Equally important is your produce, how it was farmed, which variety it is and what the weather conditions are. Artichokes are best in spring after a period of frost. Cauliflower is best in May. Tomatoes in July and August. For Belgian endives and radicchio it's end of year. Cabbage needs frost.

You should be making asparagus salads now. You pair them with rocket, not cilantro. They don't need dressing. You're wasting your time, money and effort.
