Woke up a few hours early so I threw together some cream cheese blintzes for us, with a few substitutions for some things I didn't have. I knew I didn't have ricotta cheese so I went with just cream cheese in the filling and I cut the sweetness with cocoa powder. Thought I didn't have powdered sugar either so I made a quick caramel so the texture would stay smooth, then found the powdered sugar after I threw everything in the oven and felt silly.
The crepes came out alright for not using the blender for mixing but my technique in stuffing and browning the outsides wasn't great so these were the better-looking ones dusted with the powdered sugar I found again.

The other set that didn't look as nice, cut into to show the filling. The caramel and the cocoa powder gave it a browner color.
Overall it was alright, I'm happy with how they turned out for the substitutions I had to make but they're not as good as a more classic recipe and they would have been a lot nicer if I had some fruit to cook down into a sauce or to lay fresh on the side.

You'd be right honestly, I made it work with what I had on hand for the impulse but it if I had the ricotta cheese on hand I'd have just made them traditionally and had a better product in the end.
I enjoy chocolate in things myself but it was not as good, the classic recipe is a classic for a reason lmao. Made for a nice learning experience and the final product was still pretty good so I'm still happy I took the time that morning. Next time I just bite the bullet and do a quick homemade ricotta cheese with milk and lemon juice while the batter rests.

Roasted some chicken today with the following marinade:
>plain yogurt
>olive oil
>worcerstershire sauce
>fresh zest of 2 small mandarins
>2x dried california chiles blended into powder
>dried hatch chile
>sumac
>roasted dried coriander
>cumin
>black pepper
>turmeric
>nutmeg
It came out pretty soft, but the flavor was less distinct than I wanted it to be. Marinaded for about 4 hours before cooking, roasted on a wire rack above a glass pan at 400F until it hit 165F internal.
Any tips on making the flavor carry better when marinading? I did a version of this last week with lemon juice instead of yogurt and just coated the meat and cooked it instead of marinading and it had a stronger flavor even if the texture wasn't as soft as this. Should I add some kind of citrus juice partway through the marinade?
