I have two choices as I am currently povvo. A casserole dish with sides about 2 inches, and a stainless steel dutch oven pot (I would not use the lid).

What do you think I should use?

I would use the casserole dish. A cookie sheet and a wire rack are actually perfect as far as the roast goes but it will make a fucking mess all over your oven by sizzling and spiting all over, and god forbid the grease spill out into the oven or onto your hands while you're trying to remove it.

A deeper roasting pan is much cleaner but then the bird doesn't get as sunburnt on the bottom and sides and that brown crispiness is supreme.

In any case your casserole dish is a happy medium, it'll be good.

No, just gonna cook it by a weight formula. And I'm following some chink's recipe, she slathers garlic butter all over it and also scoops it under the skin. It'll be resting on a bed of carrots, onions and garlic which I will use for a sauce, then I'll boil everything for stock.

Why would you do this when you can get one much cheaper and expertly done from Costco? You can even buy some poke while you are there instead of throwing half the chicken away because it's not all white meat. Or make stock with the unused dark meat/give to animals.

And I messed up a bunch of stuff, like getting the garlic butter wrong, finishing the gravy wrong, botching the carving, not having wine for the oven dish etc

Just fantastic. I ate half today and will heat up the other half tomorrow and then make stock from the bones.
