Coffee, Japan :O edition

This thread is for discussing coffee, and the one-thousand-pour folded-coffee methods of Tetsu Kasuya.

If you're new and confused, start here: https://pastebin.com/UEzwuyLz

if you're old and confused, you need to do many more, smaller pours.

i realized I've been grinding kind of fine for some beans so i started doing coarser and it's cool how it opens up different flavors. for instance this one bean i have tastes caramelly at a finer grind and almost herbal at a coarser grind.
i watched his 4:6 video and he grinds even coarser, like at a french press level. it is tanoshii to experiment with grind sizes.

Sir a Caramel Mocha doesn't have any Hazelnut in it so it's impossible to substitute hazelnut for toffee. You should use the app for these complicated orders so you don't keep making mistakes.

have you heard of this "Global Tasting Event" that's gonna be hosted by Hoffman on October 3rd.

>The project takes a single lot of coffee and processes it four different ways, isolating fermentation as the one variable that changes from cup to cup. Everything else, the origin, the variety, the harvest, stays exactly the same.

>1. Mechanically Demucilaged (The Control): No fermentation. This profile relies entirely on the terroir, growing practices, and genetic varietal characteristics of the coffee.

>2. Wild Fermentation: A traditional 48-hour submerged fermentation relying on local, wild microbes to naturally remove the mucilage.

>3. Lactobacillus Inoculated Fermentation: A 48-hour submerged fermentation driven by Lactobacillus bacteria, here, targeted bacteria boost organic acids for brighter, more complex cups.

>4. Yeast Inoculated Fermentation: A 48-hour submerged fermentation using Saccharomyces yeast, illustrating how yeast enhances flavor precursors to impact body and structural complexity.

i guess some local roasters are doing preorders of the same beans in a sampler pack so you can taste along. could be interesting.

my thrift store delonghi came without the portafilter missing and had coffee grounds in every single nook and cranny of the group head threads and also deep into the shower screen and always wondered how they managed to fuck it up
anyway, I left the portafilter in once while using the steam mode and accidentally recreated how that happens, the boiler boils the water still left in the portafilter quickly and sneezes out the super-dried coffee puck everywhere if you unscrew it

i wonder if this is what leads retards to ragequit the whole machine and donate it to goodwill

i wonder if they are in a hug box where no one close to the mag actually gives real critique.
like its clearly very liberal and as we all know liberals are very performative, especially when it comes to putting money where their mouth is.
like they could shout from the roof tops that standart needs to be full of woke journalism but when it actually comes time to buy that mag those same people are nowhere to be found. so the price goes up and is paid for by people who didnt want all that stuff.

i like it but usually only a third of the contents + the "free" coffee sample is interesting to me, the other 60% is just too woke.
the original price was a good deal, the increase was a bit much but still worth it for me, another increase to $130? ...idk man...

>>
>>22155188
Really? I had no idea. I'll look into it.
>>
>>22155231
just buy a few kilos of the cheapest coffee and run it through the grinder
then clean the burrs and re-zero it and start grinding your good beans
even if the manufacturer claims the burrs are seasoned, they probably arent.
seasoned vs unseasoned burrs taste and grind differently. you cant start dialing in until its done.

The C3 is fine. The only two options in that $70 range is the C3 and Q-air. The C3 has better build quality with the metal body, but the Q-air has a better burr. Small conicals like that only need a kilo or two of seasoning before they perform their best. And if you get tired of it you can always wrench off the bottom plate holding the ring burr and try installing some other 38mm burrset like pic related.
Regarding the aeropress just experiment and do whatever tastes best, since you can independently adjust every variable with it. I found that I proffered very coarse grinds (like 1500+ microns), but that was with an Encore.

Went to a pourover (V60) course a few days ago. Pretty cool to do, got to taste some different techniques and settings back to back to really see the difference it made. Also got to try a bunch of different beans right after each other, some were very underdeveloped and I had a really hard time getting the taste which made sense because of the roast.
Biggest takeaways were keeping the V60 warm makes a difference, pouring technique makes a huge difference and that I might have to try adding minerals to my water.
Overall I feel like it was money better spent than just buying more gear

pour over has the most potential for expression of autism, and japan is all about finding new ways to express skill through deep and thorough autism.
there's a lot you can do to affect a cup of pourover coffee - changing the shape and material of the dripper, the temperature of the water, the minerals in the water, the strength, amount, and shape of your pour, number of pours, etc.
i dont think the draw of the pourover is unique to japs, but they do like to try and do thing really skillfully and develop their techniques and materials for doing it.

but nantucket is a medium roast. if you like the taste of black coffee, it's gonna taste like normal black coffee.
if you want to be a little more adventurous and get something with a little more character, several kcup brands are doing single origin cups now. maybe a colombian or ethiopian cup would be a little more intriguing than the generic blends and give you an idea of the character of specific beans.

so it's just some mutant of every other bean they pull out of java or sumatra (all of which are generally considered to have a lower cup quality) but theyre trying to say it's like gesha?
they even label it as gesha on the bag then say it's just typica with similarities to gesha. just seems like a lot of red flags.

Welcome to coffee. Its the same thing with another "meme varietal". Columbian Caturra Chiroso. Not a Caturra, nor is it Columbian. 100% ethiopian landrace that sprung up. Its just a short plant so they call it a caturra. When that 100% natural ethiopian landrace mutates and crosspollinates to create taller plants they just call it Bourbon Chiroso. Turns out these random mutant ethiopians are pretty fucking good.

Do you mean coffee grown in Gori Gesha? Or a particular variety that came out of that forest or the surrounding region? Or do you mean Gesha Village in particular? Or a specific ethiopian landrace transplanted to central and south america?
>when it is not gesha by their own admission
Because it looks and tastes like gesha.

>There is not a single Gesha type. Most seeds came from CATIE and the plot was reported from the first plantings in Panama as being mixed, with a bronze-leaf upright type, and green-leaf compact type. (Referring to the color of the new young leaf on the plant.) Since then, and it’s spread all over Latin America and across the world, the variety has become only more unclear in terms of traceability. Indeed it tended to hybridize over time with other varieties planted around it, and the clarity of the cup character changing along with it. (Arabica is self pollinating and does not tend to hybridize but in time, and with many instances of planting, it will).

according to the people trying to sell it to you, sure.
putting gesha on the label when they have provided no evidence that it's related to any gesha, in any way, is unethical. evoking the name of "gesha" is just riding the coattails of panamanian gesha and a pseudomythical connection to Gori Gesha. it's just fluff marketing.
if they know it's a weird new mutant typica they could just name it something cool and sell it as a novel hybrid or something but theyre insisting on calling it gesha with nothing to back that up besides, "trust us, bro".
I'm sure it'll taste like decent coffee but their business practices seem shady as fuck.

Had a natural geisha brewed with an Orea Z1 flat bottom brewer. Tasted amazing and I can't replicate it with my V60. I think I will be consooming a flat bottom brewer soonâ„¢
The barista wasn't even doing anything particularly complicated: 20g of grounds in, 100g of water, 100g of water, 100g of water, took about 4 minutes total

Also I'm unsure what to do with my Gaggiuino. Having PID was a huge benefit but I don't really understand flow profiling well enough yet to diagnose what I want done/changed in my shots to get more or less of certain flavors

Question for coffee drinkers here. Honest now joking replies only please. Why do many of you still use ceramic mugs to drink your coffee instead of switching to a double wall vacuum insulated mug that keeps it hotter for much much longer? You won't need to keep using the microwave saving many kWh over the years? Also, you won't burn your fingers accidentally and won't shatter if you drop it.
>>
>>22158291

why are you posting bait in the coffe general of all places? you really have nothing better to do?
>>
>>22158299
None of you can ever give me a logical reason that makes sense. It's not bait, it's actually a better way to drink hot and cold beverages. I've asked this like every year or two and always get the same nonsensical replies. What's wrong with a strong metal mug that keeps your coffee hot? If you can't answer that with all truthfulness, don't reply at all.
>>
>>22158298
And?
>>
>>22158291
>double wall vacuum insulated mug that keeps it hotter for much much longer
Its hard to taste very hot or very cold things. If you're not drinking shitty coffee, cooler coffee tastes better than piping hot. I drink out of crystal, mouthblown glass, and porcelain. If I want a hotter cup, I make another cup.
>>
>>22158302
and what?
>>
>>22158307
This makes some sense. I prefer that the temperature of my coffee or tea remain at near my ideal point for longer. Sometimes I even have to use the bathroom in the morning and my father from my youth would get into something and come back to lukewarm coffee and toss it. I know quite a few who really dislike lukewarm coffee.

So let's say it's too hot like you say. Just take the top off and it will cool pretty quick until it's your ideal temperature. Then put that cover back on and it will keep it like that longer.

I really am not trying to bait here and this has been a multi-year thing for me and all I've ever come up with is you have an attraction to a certain cup or like doing things the old way perhaps as some sort of homage to your parents when you first started drinking coffee.
>>
>>22158311
Ok you're drinking it right now. I don't see why that matters. You can drink it all at once with the vac insulated mug but you have the option to extend the warmth of it if you need to go do something in a pinch.
>>
>>22158312
>Just take the top off
Are you drinking in the car? Are you a child with a sippy cup? There's no need for a lid unless you're disabled.
> I prefer that the temperature of my coffee or tea remain at near my ideal point for longer.

first of all - and this is a serious answer, not bait or meanspirited - if you're asking this question all the time and never getting "the right answer" you are on the autism spectrum. so get tested and take steps to fix that, as it's certainly affecting many areas of your life besides coffee.
back to your actual question, what kind of metal are we talking about? if you're not using 314L stainless or titanium you are affecting the flavor of your coffee. coffee drinkers dont want that.
metal also looks low class and doesnt feel good on the lips. not to mention that most people here are probably brewing a single serving of coffee of around 150-300mL each time, so there is no need to keep it very hot since it will be consumed quickly.
i sincerely hope this helps.

Lol no. I've switched much of my tableware to double wall vacuum. This has a lid and keeps soup hotter and prevents ice cream from melting.

It's just better. Some are 304s I think a few might be higher but even 304s have great heat resistance. I'm not using them in intense lab or marine applications so it's more than plenty. They were designed for this application.

you dont have to turn it off, you can just physically lift the moka off the stove for a few seconds
and it should be on low when the coffee starts flowing until you turn it off entirely which should be when the coffee reaches roughly half way to the spout.
