For a long time I was on V60 since it was the lowest effort, good way to shit out coffee, but I'll be honest, taking the switch pill and just doing immersion, is way too fucking easy and it comes out good 90% of the time.

Pretty much. There's a little optimization you can do with swapping in a mugen/neo/alpha/orea dripper on top(or the new timemore one coming out which hopefully works with the vector) but I'd just wait until you break your glass cone.

I have had issues even using a finum basket. it just doesn't work. either way, it is still too oily. I prefer paper filtered coffee. even when I was wasting time using the moka pot, I was using aeropress paper filters in them to get that flavor I wanted.

you just need to make sure you use enough of it, which is usually 50% to 100% more than they tell you to use. i also add a pinch of salt and sugar. i prefer the nescafe freeze dried ones. tasters choice and the colombian one.
you dont get the separation of flavor notes and acidity of pour over but i still like to have a rough robust cup of instant fairly often, especially on cold mornings.

I need to get a burr grinder, but the list on the pastebin is a little small. I can get some discounts on bigger brand names like cuisinart, oxo, kitchenaid, black and decker, breville, braun etc.
I don't think my beans are quality enough to warrant a $200+ grinder. Level Ground is pretty good, but not phenomenal.
They all seem to have a good range of sizing from fine to coarse. oxo apparently has a range of 45 grain sizes.

If you snap off the plastic guardrails on your typical conical burr grinder, you can lower the burr gap to near zero and make espresso tier grinds on a sub $50 electric burr grinder.

Theres a common trend that coffee grinders make coarse grain coffee, and to get finer grain suitable for espresso you need to specifically look out for it with "coffee grinder for espresso" or something
