so, do we think toby's really gonna lock all the ch5 spamtenna content behind the objectively meaner branch of the re-housing decision tree from ch4, or do we think it's more likely that there will be some plot contrivance that causes tenna to come back to castle town even if we gave him away to mettaton?

Either could be the case. Like King and Queen, Tenna’s role in the prophecy is most likely finished by the end of the chapter he debuts in. He probably won’t do anything important with the Fun Gang in future chapters beyond hanging around in Castle Town and getting involved in stuff about the Dreemurr family, Spamton and Mike. There’s also no incentive to make a Dark World in Mettaton’s house, and that choice could very much be final. However, even without Tenna, nothing is stopping more scenes that mention or feature Spamton and/or Mike from taking place in both branches. It’s just harder to imagine Tenna and Spamton reuniting and making up (or officially breaking up) when Tenna isn’t in a Dark World, if that is ever happening at all. There has been surprisingly more build-up regarding Spamton and Tenna than expected, to the point where it would arguably be weird if Toby didn’t plan to grant them at least some closure, but he might find it thematically appropriate to write Tenna moving on from Spamton, the Dreemurrs and TV World in one timeline and Tenna reconciling with the past and being with Kris in another. On the other hand, anything could happen. There’s that theory that suggests the entirety of Hometown itself might be engulfed by a Dark Fountain or the Roaring, which could be a contrived way for Tenna in Mettaton’s house to reappear again. Castle Town isn’t guaranteed to survive against whatever stakes the prophecy has foretold, so you could theoretically end up being forced to relocate all the Darkners away from that closet anyway. In the worst case scenario, Spamtenna content ceases completely, and this is all we will ever get. Who knows what’s taking place in Toby’s mind right now? All we can hope for is that he knows what the fans want and can deliver. At least replaying, walkthroughs, wikis and save file editors are always available options if you make a regrettable choice while playing.
