Because they lived much different lives than those of comic book creators of ye olden days. Kirby and Lee were children of immigrants who served in the army. They met many different types of people and were exposed to many different ideas.
That said, it's not that modern writers are more childish, it's that they're more cynical. For good or ill, they just don't have the faith older writers did. They don't believe in God or country or the human spirit, and that is reflected in their work. To them, utopia is ever only a few steps away, but unattainable. Somebody will reach out and touch it to show how close it is, and then it will slip away because that is how things are. Not because of the nature of man, not because there was anything wrong with the act itself, but just because.
Old writers were not so cynical. They could believe in something. Even if it was just jingoism and blind faith, something written by somebody who believes in it will always be better than something written by somebody who believes in nothing.

I would agree with you if the problem with higher education for everyone hadn't already reared it's ugly head without being free. Currently you need a college degree to work at fucking Starbucks, because almost everyone in the job market already has a degree. Perhaps you could argue that you just have to make the degrees you can get for free something useful, but when you have an overabundance of business majors because it requires the least math and no engineers you still have the same problem.
Maybe dropping everything into trying to get people into trade schools could work if it included more practical professions like CNC operator ECT... Doom is the only person in the MCU who could turn the world into a Utopian Paradise, but that's because he's a fictional science wizard with unlimited resources. Belief/cynicism. Faith is just a type of belief here.
For a particularly grandiose example, look at God Loves, Man Kills. It's a story about Xavier's belief in coexistence being tested by somebody whose dogma blinds him to their shared humanity believes in. Magneto shows up and helps the X-Men, whispers in their ear about the futility of Xavier's dream, and he's got a pretty good argument in the guy trying to kill them. At the climax, the X-Men go on stage with Stryker and practice their belief, and a human, just a guard in the stands, sides with them, because Stryker is about to kill an unresisting little girl. They return home, where the threat isn't really defeated, and Xavier questions his beliefs, only for his students to reject siding with Magneto.
Xavier's beliefs reflect Claremont's own. He tells this story because it's what he believes in. Coexistence is better than the alternative. The villain is ultimately defeated because he is antithetical to that, and the heroes continue to fight because they believe in what they're striving for.
That's not the case with One World Under Doom. The heroes fight because "that's Doom". Even when it's revealed that there's no mind control or anything, "that's Doom". And Doom begins to lose his hold, not because the writer believes in any fundamental problem in a guy taking over the world, but because the heroes finally find something on Doom after months of looking.
It's an exercise in cynicism. The good guys fight the bad guy because he's bad, the bad guy will be defeated because of an informed attribute pulled out of a hat. Nobody will wake away from it thinking "it's wrong for somebody to unilaterally impose his will for the greater good", because the writer doesn't believe that. To the extent that the writer believes in anything, it's that making the world into a utopia is actually really easy, but it won't happen because because. He doesn't believe in any vision, just that we can't reach it.
