Being able to communicate with all squirrels on earth is a solid power all by itself. I mean fuck. Imagine being attacked by all the squirrels in New York. That's a lot of squirrels.Her being the hero that can beat anyone is really a power that every fictional character has in the right hands. I can write a story with Aunt May beating The Sinister Six, and while it'd be HARD I bet I could even have it make sense (she's beaten Chamelon before, and Doc Ock's got a soft spot for her, hell I'm a third of the way there already). The thing that makes Squirrel Girl the most different is she's confident in herself. Lots of heroes pull off unlikely wins against the likes of Doctor Doom and Ultron. Squirrel Girl pulls off similar feats, she just goes into the battle thinking "I'm going to win somehow" before she fights, then goes "knew it" when she walks away the victor. Other heroes pull off the same shit, but they go in thinking "I don't see how I can possibly survive, but I have to try!" and are shocked when they win.
