Simple design makes her an easy template to apply to other characters.
As a tacky sexualized souvenir, turning a character into a Sunny overlaps with dollification and bimbofication fetishes.
For me personally, I like the metatextual angle of turning modern CGI women into crude and primitive 80s graphics like some kinda horny version of Duck Amuck and that's why the TF art largely started around requests to make other Pixar characters into Sunnies.
