What was with Broccoli being singled out amongst other vegetables in cartoons as particularly nasty. Brussels Sprouts are infinitely worse and go underhated as a food

Maybe because almost noone eats brussels, so you can't use that (not relatable).

For me, it was spinach, it tasted awful. But before that is green peas and corn, oh Jeez, how I suffered with those.

Now is a different story. I can eat them, but still hate them. Except for spinach maybe? I barely have eaten it outside of soup, so I can't tell.

I didn't like any of them as a kid. I still don't really like cooked broccoli.

Amerifats made veggies unappealing due to mass production, GMO and other chemicals they spray on their stuff, plus they can't cook for shit anyway, so of course no children in the 90s/00s was gonna like veggies. Later some regulations came and people started buying organic and learning how to actually cook so some burgers slowly came to like veggies again.

If you need to cover something in salt, butter, and cheese to make it taste good, then it's simply shit.

And that's the overwheming majority of vegetables, because the same people that made that god-awful food pyramid convinced the public vegetables are good for you, and haven't been able to accept the fact that it's not true.

Apparently a lot of vegetables taste a lot better now than they did 30+ years ago plus as other people mentioned proper cooking can make a world of difference. But in terms of cartoons broccoli is an easy visual shorthand to set up a contrast between what kids want vs adults.
