I stopped watching new cartoons around 2009 so I never really watched any of these shows when they were new. Are they worth a watch or am I just gonna be disappointed by the seasonal rot?

Watch until S6.Regular Show remains the most consistent of the three, even if it does devolve into soap opera shit. Gumball starts as diet chowder, but becomes more cynical as it goes on. I think it's for the best, since the humor became sharper and more tongue in cheek. It's also the most creative with it's visual style.
