It was retconned that Fionna's world is real and the creation of Prismo, it was just stored in Ice King's brain because it broke regulations. He stored it there since Ice King couldn't form real memories and the only alteration it seemed to cause was making all the females horny for Ice King.
The reason it's different now is that when Ice King reverted back into Simon, there was no source of magic anymore and Simon's real memories/personality reshaped it into something that resembled the world before the Mushroom war.
