Why did the remake change the ending?

The remake was an homage to both the animated film and the books. And in the books I'm pretty sure Mowgli ends up not permanently leaving the jungle.

Not exactly true.

In the first story, Mowgli does not want to leave the jungle even though the threat of Shere Khan is looming, so he uses a torch to threaten Shere Khan into not harming anyone but in doing so he proves that is indeed the dangerous human Shere Khan feared he was, so he leaves for a human settlement.

In the story set afterwards, he becomes a bison herder and discovers that Shere Khan is still planning on killing him, so he co-operates with the wolves to kill him and present the skin to the other animals to confirm Shere Khan is no longer a threat to them. Unfortunately a hunter who wanted a reward for killing the tiger saw this and being salty that he can no longer claim it accuses Mowgli of controlling the wolves through witchcraft, which leads to his adoptive family being kicked out of the village and Mowgli returning to the jungle.

In the final story to feature Mowgli, he finds his adoptive mother living in a new village and wishing to reconnect with him. He wants to stay in the jungle but is noticing the harsh reality that he has already outlived the wolf cubs he grew up with, to which Bagheera and Baloo respond with that he'll outlive them too. So they him to always remember they loved him but that he'd do best to return to the humans.

Of course, even if the final story about Mowgli had ended with him staying in the jungle, it wouldn't have mattered. A lot of people don't know about this but the Mowgli stories collected in the Jungle Book are actually prequels to a different short story in a different collection, in which the fully grown Mowgli takes a job as a forest ranger and gets married. So it would have been pointless to say "Mowgli returned to live in the jungle in the book" even if it was true because the story where definitively integrates into society would always have pre-dated it.
