The whole point of the movie is he sees everyone around him with the same face/voice regardless of age/gender/etc, and that's why he ends up so enamored with Anomalisa because she's actually different somehow.It would have been too weird and obvious if they had just CGIed the same face on everyone and dubbed the voices. Not to mention way more expensive.
