By "simulation" do you strictly mean an artificial reality that does not qualify as real and had to emerge by design or stuff like the microverse and lucid dream type scenarios as well?

In case you mean a strictly artificial reality, then "M. Night Shaym-Aliens!", "The ABC's of Beth", "Never Ricking Morty", "Rick: A Mort Well Lived", "Full Meta Jackrick", "Summer of All Fears", "Ricker than Fiction" and possibly "Fear No Mort" (it's a little unclear how much of what happens in that last one is by design) are the simulation episodes or at least the ones where it is a major part of the plot that there is a simulation by the strict definition.

If you mean the latter, the the expands to "Lawnmower Dog", "Anatomy Park", "Mortynight Run", "Auto Erotic Assimilation", "Total Rickall", "The Ricks Must Be Crazy", "Big Trouble in Little Sanchez", "The Rickshank Rickdemption", "The Vat of Acid Episode", "Rickternal Friendshine of the Spotless Mort" and "Hot Rick".

There are also some ambiguous situations, like the Dragon Dimension and the "Narnia" dimension aren't entered through "normal" or well explained means and aspects of them don't seem to align with how "real" realities are supposed to work, but they never say these realities aren't just part of the normal multiverse regardless. I'm not counting them because I'm not sure whether they're "fake" or not.

So to recap, there are seven or eight "simulation" episodes under the strict definition and another eleven under a looser definition, then a bunch of ones that may qualify but the "realness" of what's going on is too ambiguous to definitively make them qualify under either definition. So they've done at least one per season on average and possibly up to two or more. Since there are four more seasons expected, then if they continue on the same trajectory, it'll be between four and eight more simulation episodes.

The way I see it, Elephant Morty is still a Morty and so it will depend on how far he's pushed or what his incentive is. Because Morty's self-image and the way he's seen by others is that of a weak idiot who is too kindly and insecure to defend himself from abuse, it effectively perpetuates a vicious cycle where he gets abused all the time. Of course when the abuse reaches a limit or he's given the opportunity to get something he really wants, the real him is unleashed and that turns out to be a calculating psychopath who can and will execute complex plans to commit murder.

The only difference is whether or not you'll get flung across the room by a trunk.
