I really like Keith Scott's books on the Jay Ward studio and Golden Age voice actors
Mark Arnold writes a variety of books but his TTV book is his best
William Hanna and Joseph Barbera both wrote autobios, I've read Joe's but not Bill's yet
DisneyWar I've heard is a little "of its' time" with its' attitude towards the Eisner era but it's well regarded
I assume there's books of the same depth and value of Scott's Jay Ward book about the Warner Bros. and MGM studios but I can't think of any, Jones wrote an autobio around 96, there's an Avery book called I believe "King of Cartoons", and there's "Of Mice and Magic" about cartoon history in general
This barely talks about cartoons but it's relevant to where Warner Bros. is today, "There Must Be a Pony In Here Somewhere" about the AOL-TW merger

A problem I have some what with /co/ books is there's a lot more "filmography books" and art books rather than straightforward biographies or histories, especially for some studios
Picrel is good at it I hear
