Good writing. The characters and the situations were more exaggerated versions of things that would happen in real life without being too cartoonish. A lot of the humor comes from established and consistent personalities for the characters which informs how they act in situations. The reason the later seasons aren't as good is because the characters start to become more flanderized and the situations stretching believability. It's still fine most of the times but you get to episodes like the pig guy and it feels more like a light Simpsons episode and not KotH.

If by a war you mean two men and a Lewis Gun. Emus are surprisingly tough to take out en mass because of two factors: firstly, their vital organs don't take up as much room in their bodies as you'd think. They can absorb hits and leg it, maybe slowly bleeding out later.
Secondly, and this is the big one, they will scatter the moment something spooks them. Absolute pandemonium, the birds will run in every direction all at once. You'll only have time to get one or two down before the rest have fucked off out of range. They're also stupid as shit and will gladly throw themselves at moving vehicles without a second thought. I myself witnessed an emu running headfirst into the broad side of a road train. It was literally impossible for it to do that accidentally. Damned thing just bounced right off, staggered a little, and kept running back the other direction.

This. The reason it works is because the characters feel authentic to the part of America they're portraying. I grew up mostly in the American south and KotH is still one of the most realistic depictions of it I've ever seen because it doesn't glorify or demonize it. It shows it for what it is, which is just generally fucking weird.

I'm from yurp originally but have lived in Delmarva and the Philly area off and on for the past 30 years. If you take all the whacky shit out of it, Universal Basic Guys is the most realistic portrayal of Philadelphia I've ever seen besides that show Tires. They even reference landmarks that locals would know but nobody else ever would, like Ponzio's Diner or the Mütter museum (which I used to live around the corner from).
