Why are most cartoons based on video games not very good? Sure, a lot of them are enjoyable, but more in the memetic so bad it's good way.
Writers intentionally make them worse, because they don't want producers to realize they're grossly over paid.

They might read the back of the box or something but that's about it. Other times the writers think the game story is stupid or too weird for audiences and they think they can do better.

Or Van Dam's The Quest is pretty much the same thing, which came out years before the MK cartoon.I don't know how cartoon creators missed how Sonic the Hedgehog is more of a standard Looney Tunes short but with more of a Captain Planet lesson. The first two games move just like a Bugs Bunny cartoon. Some evil fat Yosemite Sam type from a polluted factory covered shithole shows up in the woods, starts cutting down trees and kidnapping animals, a local animal decides to fuck with him.
