In American animation the most common cartoon animals you see are usually rabbits, ducks and pigs. I'm curious on other countries, I know Japan loves foxes and dogs.
Mainstays of soviet fairy tale cartoons were bears (obviously), wolves, foxes and rabbits, each representing a distinct character archetype.Sprinkle in some squirrels, hedgehogs and other forest critters as extras. It has carried over to modern russian animation as well.
