The way that connection saves him in the end after he got shot with lightning, was a perfect capstone to how much he had grown as a person. He had earned the trust and love of someone who hated him; from someone he was raised to believe he was superior to. I think if they had fleshed out that connection more it could've been an even more powerful moment. It would perfectly exemplified what Iroh said about the arbitrary divisions between people - how the four nations are illusory. How war divides people who would otherwise be capable of finding love with another. Katara's journey is largely about learning to forgive, and let go. To see things as less black and white. Her relationship with Zuko is obviously a big part of that personal journey already, but again could've been elevated had they fleshed it out more. I also think they set it up really well with the parallel to the mythic story of Oma and Shu - two lovers divided by opposing sides of war, whose union helps brings about an era of peace. It would've been neat if they had mirrored this with Zuko and Katara as it would've leant the story a more mythic quality.
