I think she can't touch it because it clashes with her professionalism, the whole episode implied that anyone working as a bureaucrat does so because they have that very unique brand of autism. Her job would implode if she allowed herself to slip into the deviant embrace of being a fat slob. Which in turn makes it all the more thrilling and exciting to think of that dirty sexy lifestyle just ruining her.
Since the two sides of herself are in such direct opposition she has to stick to being a professional for the sake of her job. Thus she settles for being sexually attracted to the thing she can't be. If there was a way she could have both or her financial needs could be met while treating obsessive bureaucracy as a hobby to fulfill her autism then she'd be free to completely destroy herself with the most depraved slovenly acts of hedonism and indulgence.

Then again I'd love an episode where she came back to Planet Express to usurp control again and used them as her personal harem turning everyone there into fat slobs as revenge/sexual fantasy. While Fry is a slob all the time pretty much everyone there has shown themselves to be just as bad.
