Why did lorebait shows become so popular? By that, I mean cartoons that are really no different from the episodic cartoons of old but occasionally bring back or reference something from a previous episode, or have some vague "lore" or mystery that unfolds throughout the season to loosely tie all the random nonsense together.

if i had to guess, someone wanted to make a pure lore show but suits either don't think children want that or think it'd get them in trouble otherwise.
plus there is a subset which was imagined as an episodic show but people involved in it decided to start adding stuff.

The only show that even comes close to this is Gumball and even then those episodes are so easy to avoid I'm not sure it counts.

Because it gives the audience something to keep coming back for and it gives the sense of a deeper story (whether or not it succeeds is dependent on the show).
