She said it was a 5-season show, and before this week, only 4 seasons were greenlit. The final fifth season depended entirely on viewership, and because it succeeded, it will get the ending the showrunner wants. It's not cancelled, it's ending on the creator's terms. She still has a deal with Amazon Prime Video to make more Helluva Boss and will probably do that Vees spinoff she keeps talking about. Vox Machina is similarly ending after 5 seasons because that's when Critical Role wants the story to wrap up. That group is not "cancelled" as they are adapting Mighty Nein, so their stories will continue, just in different shows.
