Different applications, I actually prefer propane because it's super easy to work with and you can get that smokey flavor just by adding woodchips. No trouble starting it up and a ton of flavor is just from the meat and fat dripping on the flames and bringing up smoke.

Back on topic, it frankly depends on the purpose. Propane offers exact control of your heat, and holds to the idea of food tasting like itself; delicate flesh like seafood is something that would benefit from said control and clean heat. Charcoal, however, does indeed impart a flavor of its own that many prefer, same with various woods that can be tossed into a smoker to flavor meat as well. I happen to like applewood, and the few times I've tried peat barbecue at Irish cultural festivals.

With propane any idiot can fire up the grill and flash burn a piece of meat. But when you cook with charcoal you have to have the patience and skill to get it going, then the low flame cooks the meat more evenly because you cant turn up the heat arbitrarily like with propane, which also means that you need to actually watch the meat cook and turn it over more than once which results in more even heating.

I just slap some Montreal steak seasoning on it but I'd recommend you just use whatever steak seasoning you normally use. And I tenderize both sides with a meat mallet, if you don't do that then I highly recommend it because there is a world of difference between a tenderized and non-tenderized steak. If I'm cooking on a grill or skillet I'll add some mushrooms, onions and butter but trying that in the air fryer has been disappointing so I wouldn't recommend it.
I rarely marinate my steaks because I don't really want to do the extra work for a slight increase in taste. I rarely use sauce because I'll season my steaks enough that they don't need it, also if your steaks are so dry they need sauce then you did something wrong and need to eat them as is to punish yourself so you don't do it again.

I cook my steaks in a George Foreman grill. Brush a little bit of smoked beef tallow that I've rendered from brisket trimmings onto the grates and cook and sear the steak for about a minute or two, flip, then cook for another minute. Depending on the thickness and time, you can get pretty good medium/med-rare with decent crust and pretty grill marks. Since it cooks on both sides at the same time, it will take less than 5 minutes to cook.
