The reason Viz is just selling the censored three in one DBZ books is that they don't want to put out of the money on retranslating it, especially since the early volumes has super fucking problematic shit that they have to scrub for obvious reasons (IE full frontal child nudity of Goku) and don't want to fucking draw attention to, because of the massive shit storm that hit when they first put out Dragon Ball in comic format as there was a huge scandal over how they left the nudity intact upon initial release. The fact that the previous translation was written by a pedo (who also did other translations) and that Disney just found out about him being a pedo and ordered a blanket ban on his shit ever being reprinted) is just an added PR nightmare that Viz has been praying never hits the media.
