So there is this kitbashing thing, where you replace and modify default model kits. I've done plenty of repairs to many plush mares and learning to ladder stitch is all it takes (mostly)

Mostly sewing as other anons said. You won't be patterning which is the hard part of custom plushies. The trick is you sew everything inside out as much as possible. Look up diy dnd dice bags, plushies are just complex bags so that's the closest to a tutorial I can think of.
