Just bought my first car used, and the "leather" on the shifter knob is crumbling to bits. I'm thinking of putting some black epoxy clay to sculp back the shape in the missing cavities, but does anyone have a better idea? I've done miniature modelling with stuff like that before, but don't know how I would float the surface smooth

Get a replacement shifter or peel it off and glue on new leather, art stores sell the real and synthetic stuff.

No DIY is going to feel right. Depending on the car its probably not more than $100-150 to replace with a new shift knob. You may have to look it up by part number in a parts catalog and buy from a dealer. Do not buy a chinese clone shift knob it will deteriorate in a month.
There is a thread called >sqtddtot which is where questions like this should be posted in the future.

I havent seen good results for someone rewrapping an automatic knob like that with a release button. Any off the shelf vinyl/leather product and most glue wont hold up to regular use and will peel up at the edges. A manual gear shifter, simpler shape, without those seams is totally different. Mine is basically a cue ball with a nut inside.
But this is DIY so feel free to fuck around and make it out of horrifying anthropomorphized silicone at expense of 3x versus buying a new one.

you don't know where this shifter knob has been

probably easier and cheaper to just go to the junk yard and pick one.
