best bet is always to go vintage. unfortunately good vintage ones are hard to find, and increasingly expensive since the jacket got really popular
alpha industries made the original jackets for the us military, but there's are made in china now which is disappointing.
brands like real mccoys do the most accurate repros, but they're ridiculously expensive since you're paying for samuaris making them from thread that's been folded over 1000 times
iron heart makes a really nice one that's a bit more modern in design

Without the liner it's just a cotton jacket, not very warm despite a lot of bulk without one. The hood sucks even worse. They look cool but they are not "good" for anything really. If you want the olive green military look I would suggest the A-2 Deck Jacket. It's lined by default, fits better and looks less military. Very slept on, and no larpy connotations.

Got an M-51 myself, and not disappointed. I didn't find the liner, yet. Seems more difficult. Found an original M-65 liner last weekend though, which works on the M-51, except it's a bit more snug. Got it for 5, and will use it till i find the original liner for the 51

They were made for winter conditions so even without the liner they are fairly comfy to about 4.5c 40f if you are an Amerikaner I was very happy with mine until it wore completely out

Tailoring a jacket to be shorter is a lot harder than you think it is. You have to take the jacket apart, remove the ribbing, shorten the zipper, cut off the excess and resew it together with the lining and have it look good. And that's if you can even find a leather alterations place that can pull it off

That's an A2 jacket. You can get them from anybody. Cockpit usa is a reproduction brand, made in usa, and has pricepoints from ~$500 for a pigskin version to ~$800 for horsehide and sheepskin with goat and cow falling in between. They also have suede.

base layer to wick away sweat
and depending on how cold, windy, wet it is
either just and insulation layer
or that plus a solf shell for wind
or an insulation layer with a hard shell if it rains and snows
now if your climate is just right you might be able to find one jacket that can both insulate and protect from the environment but everything has to be very specific

I went with charcoal. It's the safe option but it's versatile, effortless to style and never looks out of place. Indigo was very tempting though, vibrant like a classic french chore coat. The other colors didn't interest me, natural cotton just isn't my thing and the brown and green were too muted. A deeper pine green would look incredible I bet.
