Always wore Vans but I'm an adult now and I need adult shoes so obviously no sneakers but I don't want to wear no dumbass boat shoes or dress shoes. It needs to be casual enough to wear with jeans. What are my options?

Sneakers and boots are both shoes designed for specific purposes, and if you aren't doing work outside, sneakers are going to be more appropriate for your purpose (just walking/sitting/standing around).
