It's not so different from assembling computers complexity wise, though it requires more tools and dexterity. I made two, couldn't call that building since I was just assembling a case, strap, movement, dial and hands. It's a bit frustating since the vast majority of the parts available on aliexpress are clones of popular brands so any watch you assemble will look like a cheap derivative of a bunch of well known brand watches. But still interesting.
This more involved side of the hobby is to service and repair vintage watches, that side can go really far (knowledge and experience required, cost of tooling). Plenty of channels on youtube but I haven't tried it myself.

I put together one with an NH seiko movement, got the dial from a proper mod shop and the rest of the bits like hands, case, strap, movement from aliexpress. the quality was actually quite nice and came in under $100. Could do it well under if you got a cheap Chinese dial too.

I accidentally broke off the seconds hand, as I was using a hand press thats just done by hand. they make little stands you can center and press down alot more accurately, id suggest getting one of those or a few extra cheap hands to practice on. Id suggest it for sure, if you already own an older seiko you could swap out the movement to get hacking, hand winding, etc from an NH and put the old movement into the custom build.

I don't get tweezers from Bergeon, they are not worth it. In general, you want to avoid Bergeon because it's never worth the price and every alternative is about as good. You go to them when they are the only ones still making that one niche tool.

Decided to buy a watch. I've narrowed my selections down to a few. I'm a complete wristlet at 6.25-6.5". I work a somewhat physical job. I'd prefer a chronograph (I know this is limiting at my wrist size). I've talked about this in previous threads over a few years now. here's a collage of the v2 sakuya watch, you should be able to glean the gist of it from this. A lot of time in inkscape, separating parts into colors and layering. Then cut each one, and assemble with glue. This one was cut with a Cricut, which gives the edges a cleaner non-burnt look but limits complexity and small detail. The Nano watch was cut with a laser cutter, but chars the face and edges. Then test fit, and make any adjustments to layering to prevent the layered card stock from hitting the hands. I usually make three or four at a time since there's a lot of risk of messing up along the assembly process, and even individual cardstock blemishes may be unsightly even if the assembly process is perfect.
My latest iterations use etched brass and paint instead. This greatly simplifies the hand process, but getting the paint consistent and even is a challenge in itself. I'm working up to glass enameling, but that requires a kiln I haven't bought yet.

As for how easy it would be : very difficult.

Vintage Tank louis manual small/ladies or a jlc master ultra thin moon? Ideally will get both, but having a hard time choosing between the two.

I like the style and feminity of the Cartier compared to all my sports watches. I want something old gold and manual wound. But I also really like Jlc as a brand, and the MUT moon in black looks sick, with a display caseback to show off the movement. I am also an astronomy nerd and the moon is my favorite celestial body.
