I used to work at a surplus store. I have bought and sold a lot of surplus clothes. The advantage of surplus is buying cheap and having money left over to get it modified. Most skip this step.

Authentic surplus won't fit great until you take them to a tailor and have them adjusted. Even jackets that are the same size, made in the same factory, serial numbers within 1000 units of each other can fit wildly different.

Ask a tailor to slim down the body and arms (specifically wrists) as needed. If you want it looking tighter in the shoulder/chest, remove the epaulets and have the breast pockets stitched flush against the chest.

I would recomend starting with a more versatile navy m65 to start, then grabbing an olive m65 down the line. Also consider an "m51 style fieldcoat" or a "safari jacket" if you are trying to dress it up more often than not.
