Is lifting 3 times a week (Fri, Sat, Sun) going to produce results if I do it right? That's the only way I can schedule it in.

How should I structure the workouts? Full body? How long per session? An hour?

if you are expert enough, you can do 2 body parts per day fairly quickly. warm up, top set, back down/drop set.

or you can just do PPL (push pull leg) or PLP in any order you want. 3-5 sets per exercise or top/backdown set or however you feel about the exercise. if you are a newb, it will take you 2-3 hours 'til you are satisfied. if you are an expert, probably less than 1.5 hours. anything you do, give urself 3 months, then tweak from there.

as long as it takes for you to hit the lifts you want.
You sound pretty new so your primary lifts to hit should be the Bench, Row, and Squat

yeah you can get results at 3 days a week provided you keep at it and train hard
I think Push Pull Legs would be idea in that situation. If you're just starting out obly go for 45mins-hour and work your way up to 90mins per session

My workouts are like 30 minutes max, 3 muscle groups (can be anything but makes sense to group like PPL), 4-5 sets per group, 1-3 minutes rest each. Ignore the guy saying 2 hours

Yes as long as you're eating and recoreing properly during the week.
For three days in a row you could go ppl to avoid overlap. Another option would be mixing exercises with minimal overlap like:
Fri-squat or quad focus-press with chest focus-triceps
Sat-deadlift or posterior chain focus- upper back-biceps
Sun-another squat or quad focus-press shoulder focus-delts
Not ideal, but you should get gains.
