Lately I've been hearing many different "facts" about what you SHOULD eat and I really can't decide what I should be eating.
I already know vegan/vegetarian/fruit-only is retarded so that's not the issue. Some people say meat only, because vegetables and fruits are worthless and just make you fat. I don't understand. What do I believe?

Just eat a balanced diet, like back in the 70s and 80s when people were still slim and healthy. This means mostly lean protein and carbs, which /fit/ will hate but fuck em they're fat anyway.

The pro-meat camp.
Vegetables are full of toxins and suck ass, don't eat them at all. Sneed oils are pure garbage, don't touch them either.
Some fruit are alright, but some are too glycating, like apples. Eat fruit with the least amounts of fructose/glucose. Honey is extremely glycating too.
Grains and nuts are also toxic, but you can ferment them and neutralize antinutrients, like in sourdough bread. Still, eat only a little and only if you want to.
Meat, organs, eggs, and dairy. Those four are the basis of a healthy diet. Try not to cook them too much. Don't eat too much dairy as an adult, 10 oz a day will suffice. Eat a lot of animal fat and butter. That's about it.

If you cook for yourself using decent-quality whole ingredients you're light years ahead of most people. Beyond that it gets pretty complicated and often personal. Since there are things you need that you can't get in plants and things you need that you can't get in animals, at least some balance is important.
Vegetables are an easy target because they don't tend to be nutritional powerhouses and it's hard to pin down what good they're doing you, but there's plenty of behind-the-scenes work plants can do, and ditching them entirely is retarded.
Good foods to prioritize: eggs, fish, organ meats, berries (including avocados), traditional fermented foods, nuts, brassica and alium plants, coffee and tea. Minimize refined sugars, but don't let the sugar content steer you away from an otherwise very healthy natural food like blueberry or beet.

The second statement is mostly true but has nothing to do with the first, which is misleading. Also it's important to note that some plant oils, especially EVOO, are nothing like modern industrial oils and can easily slot into a healthy diet.
I appreciate your comments about fermentation though, it doesn't get talked about enough.

Eggs meat milk and carbs. Butter and avocado. Greens, fruits and vegetables too. You need as much water as possible also.

If you need to cook something to death to kill the toxins, then it's common sense that you shouldn't be eating it.

You can eat and sustain yourself on raw meat,fish,eggs and dairy (as long as it comes from a healthy animal).
You can eat raw fruit without a problem.
You can't eat raw potatoes/rice/grains/etc without refining them (even if it comes from a "healthy plant) without poisoning yourself and slowly dying (just look how healthy vegans look).

As long as you eat your natural diet of fish, meat, eggs, dairy (cheese, skyr, yogurts, without the refined sugar) and fruit you'll be fine.

Disregard all fad diets. There's no autistic ascended truth about eating. Simply cook all your own meals, use real ingredients, if something makes you shit your guts out then stop eating it.

The actual schizobabble truth about nutrition can only be accessed if you have some way to examine your gut biome and tailor your diet to what you're capable of digesting most easily. If you have diarrhea after eating you didn't absorb the nutrients in the food.
