Buy red lentils and make lentil curry. Takes maybe 20 minutes and you can make multiple servings at once. You can add meat, veggies, or whatever else you want.

here's my low effort lentil dal. It's got great macros. Sometimes I put a couple eggs in it. Egg doesn't go with it perfectly but it's still good.

- 2 TBSP oil
- 2 tsp black mustard seed, 2 tsp cumin seeds. Fry until they are making popping sounds, less than a minute. If you want to add a lil something also add asafoetida (1/4 tsp), 2 cloves, 2 bayleafs.

- add an onion. put a bit of salt on it. cook the onion until it's got some color on it. 5-10min

- add some ginger and garlic and if u have it a green chili. fry for another minute or so

- add 2 tsp ground coriander. I grind my own in a mortar and pestle, ends up being way cheaper.

- cook for a couple minutes while scraping the bottom of the pan to keep shit from burning on. you will still probably be worried it will burn on, this is where the flavour comes from

- add 1.5 cups dry red lentils. I wash mine first.

- add a can of tomato sauce (mine is 12oz but whatever works). Also add a similar sized can of coconut milk or just water. Cook for 20-25 min and the lentils should be cooked through. Finish with a tsp of garam masala if you have it.

My usual lentil meal is potato and lentil curry. Just sweat an onion, throw in chunked potato and lentils, then enough water to cover. Boil for 20 minutes then throw in a curry roux block. You can also put a bag of frozen peas and carrots in when you add the roux block. It usually lines up with how long my rice cooker takes to finish.

use lentils as a mince substitute in western dishes. add a meat (flavoured) stock while boiling for improved taste. otherwise just look up dahl recipes.

I never learned to love buckwheat but my favorite way to have it was as a porridge with goji berries and coconut yogurt.

I don't cook them together. I cook the lentils and potatoes together. The rice is made separately in a rice cooker.

I used to mix lentils, buckwheat and a dash of fried bacon in a pot together and flavour it with marjoram, allspice, bay leaves and a bit of soup stock for a classic Eastern Europe taste. I guess you could substitute the bacon with mushrooms in some form if you're vegan.
The end result is a filling slop that's easy to make in huge amounts. You could look up German lentil soup too.

I like frozen vegetables. I could do that. But frozen peas are expensive.

Make a creamy lentil soup. Plenty of garlic, onion and whatever other vegetable tickles your pickle. That way you can just throw everything in a pot with a bit of chicken broth and cook it down into a mush then push it through a wire strainer.

Soak overnight, then throw away the water and boil the lentils with root vegetables, bay leaf, garlic, savory etc. until soft (takes a few hours and you need to keep stirring it or it will burn). Don't salt them or they will never get soft. When soft add salt and a sausage of your choice, Serve with crusty bread and a dash of vinegar.
The bay leaf and vinegar are extremely important for taste btw.

We eat buckwheat in Russia a lot. Only buy brown buckwheat, don't even bother with the green shit, it's some western crazies who decided that it's edible, it's not, it's literally a filler for pillows in Asia.
Just cook it like rice, then ass butter, my personal favourite is buckwheat with milk. I've been eating it like once a week since I was a kid, I emigrated like 15 years ago, and still buy it in immigrant shops.
It also works well with various meats.

I used to make lentils in a pressure cooker but you can also do the same shit in a pot, just takes longer.
Water, lentils, 1 onion, a piece of celery, one or two carrots, 1 potato, salt (or those dried japanese algaes for broths if available). Bundle up a little rosemary branch, a clove if you like or a bay leaf in something you can remove like a gauze. If you have some veggie/meat broth, add a bit for extra taste.
Veggies need to be cut up relatively small - especially the carrots so they can cook well with the rest.

I know barley and lentils can be cooked together in a rice cooker. It could be investigated if buckwheat can be cooked the same.
I prepare them with dry mushrooms and stock cube/miso. If you have an asian market nearby you could add dry scallops.
