If I'm aiming for 3x frequency on each muscle group, is there any reason to do a squat pattern over a leg extension, hamstring curl, and hip thrust individually?

Other than personal preference or saving time there’s not really any reason no.
It could cause more in-session fatigue (because you’re doing more exercise) but how that affects your progress is really

if you're doing legs 3x a week, you could reasonably program a squat variation day, a leg press-focused day, and a hip thrust day while doing leg curls/extensions after your compound lift

Hypertrophy is muscle fiber specific, if you do different exercises each training day you won’t actually get the benefit of 3x frequency.

It's all preference. Then again, why do you have to choose? Just do a squat variation, leg extensions, leg curls, and a hip hinge movement (RDLs, hip thrusts, SDLs, reverse hyperextensions, etc) during your leg day. If your recovery suffers, just squat twice a week instead of 3 times.
