Since working out again ive experienced pain on certain muscles and tendons and am looking for ways to fix it. Specifically
>knees during leg day
>ankles during cardio (light jog on treadmill)
>side or front delts during push lifts (especially dips and bench)
I dont stretch btw, not sure if that would help

This pain is caused by improper healing. Go keto and you will have much greater recovery. Carbs do not help you heal.

Not doing that but maybe youre right about the improper healing. I try to workout 6-7 days a week without a rest day and dont always get a full 8 hours sleep.

You need rest. You can't build muscle efficiently and recover from wear without at least 1 rest day.
