You have to really mince it and let it oxidize. Basically make a paste out of it and spread that on your cutting board for like 15-30 minutes then mix it with oil or whatever liquid, salt, jar it and refrigerate. If it's blended in water or oil it doesn't really have the same opportunity to oxidize.
