Heya, I do 6-day-PPL right now, but cut one day of legs, cause I'm a cyclist and walker, so I already train them regularly. Will this screw me over or is training legs once a week enough?

The only cyclers who have decent legs are short distance track cyclists so OP if this is what you are doing go for it, everyone else who cycles is a frail DYEL skeleton bragging about how they cycled 40km or some shit (they burned 12kcals doing this)
OP don't skimp out on legs whatever that may mean for you. I know they suck but properly trained quads turn into testosterone factories and your calfs are blood pumps. Don't miss out on these gains as it will improve your other lifts, there is some sort of symbiotic relationship between upper body and lower body.

Ideally you would want to hit them twice a week, but your knees can only take so much volume
I used to work retail in a large store, train legs and do 7-14 hours of cardio a week and my knees started grinding really hard even with proper hydration and stretching

Depends what you mean with "enough".
You'll still see growth but they'll probably lag behind the rest a bit.
I do something similar, I do Upper lower with 2 days upper and 1 lower, cause the other days I like to run or cycle. I'm fine with it

Godspeed, anon. After some time leg day can become enjoyable, obviously nothing beats the rush from training upper body but it comes with its own sense of enjoyment.

Twice a week is ideal but I don't think it takes that much to just have any kind of additive muscle gain. It'll just be slower but if you can find a workload where you're making any progress and stick with it long enough that'll do. I still think two days with 2-4 sets for the frontleg and 2-4 for the back leg is just easier to see improvement with.

I'm talking about the rule not the exception. There is no doubt in my mind an intense biker of any variety has strong legs but there are such better ways of building up legs.

So long as you're going hard, no. Legs develop really easily compared to pretty much everything else. Especially if you're doing well rounded training, not just quads & hams, but abductors/adductors, and calves.
