I skipped the bag this time and literally just rubbed it with olive oil and seasoned with rosemary, thyme, salt and pepper. I covered the sides with aluminum foil so it didn't splatter but left the top open and just left it in the oven the full cook time which was about 3h15m. It literally came out perfect. Crispy skin, juicy af and no stringiness either. I could barely believe it myself but it was that easy.
