at first my theory was that it was the following:

ok so i did some digging, most recipes include:
turmeric, ginger, paprika and garlic

some others also add:
garam masala, coriander, cumin, cardamom, cinnamon

what we can rule out:

ive had cardamom rice before bed before, nothing happened, as well as garlic sauces, pastes etc.

this leaves us with:
turmeric, ginger, paprika, garam masala, coriander, cumin and cinnamon

Has to be the ginger, it has aromatase-inhibiting functions, especially boiled ginger, which is what they likely use for seasoning
