Strength sports have recently became my life, but on my journey it just seems like everyone who is strong has over a decade of lifting experience. Would someone starting at 28 have any hope of reaching a 405 bench / 500 squat/ 225 ohp etc??

A 300+ bench, a 500+ squat and a 600+ deadlift is achievable natty for almost everyone if they actually work hard. If you find a powerlifting gym and coach you will get it around 4-6 years provided you are willing to get a bit chubby. I have seen it plenty of times in the powerlidting gym I got kicked out.

Never really tested my maxes, but reasonably could have barely made the 1,000 lbs club while still maintaining a bodyweight of 155 lbs, going to boxing class once a week, and going to jiujitsu twice a week. In the 5 years since then I've mostly maintained strength and focused on other things, because I'm as strong as I ever need to be to fight at, or even near, my weight.You could probably do it and hit 1500 if you do it differently from me. Specialize in the lifts without spreading yourself too thin. Allow yourself to gain weight. And be patient with it because those will be some lifetime max numbers that unavoidably take years.
