Your lower body day can easily have 6-8 exercises. Even if you go minimalist that's still four exercises for balanced development (knee hinge, hip hinge, calves, abs). And yes, you should do core on lower body day. Otherwise your upper body days get too long and intense. Both should in my opinion have no more than 8 exercises.
