If you actually did any independent reading you would know that proteins from animal origins are much more available to human digestive system than ones of plant origins.

Processed animal fat is, according to independent research, far healthier for people that processed plant fats (oils). But if you consume in their natural shape it's mostly the same. Exceptions are oversaturated foods like tallow or oily fruits (peanuts, walnuts, sunflower seed etc). Those should be consumed only in scarce quantities or during prolonged physical excretion.

Sour dough can be made with whole grain or refined. Products made from refined flour will raise more, quicker and will have more neutral flavor but both will work.

Onions can be problem when overused. It can emulate estrogen and suppress testosterone. While for men with abundance of testosterone that will not be a problem men with low testosterone to begin with can develop huge number of medical problem due to their hormone levels being out of balance. Obesity and depression are most commonly cited ones but over time disrupted hormone balance can affect almost everything. If you are lactose intolerant or vegan according to what I have read grain rye, flax, oat and barley are far better substitutes for milk than onions. It's more expensive and not as available but are better.

I think the big thing with diet and food is that people have different genetic makeups that require you to get slightly different nutrients from eachother. Like my moms side of the family and myself have huge zinc deficiencies so we need to eat more of those certain foods.

Bread made by my grandma in her village made from flour ground from their own wheat is completely different food from the bread we buy in supermarkets.

Also they would wake up at 5 feed the living stock, works around the house, work in the fields and go to bed relatively early tired. So the fact that they ate really fatty and grain heavy food and drank between 1 and two liters of home made vine (watering them down always prior to consuming) was just what they needed.
