I have not yet seen good evidence supporting a diet free from plant foods for the general population. You could try using it as an elimination diet i guess but for that i think the lion diet specifically would be a better choice.

One problem i noticed was the difficulty in actually obtaining high quality meat. I have tried various forms of beef but i have kinda given up on that and settled for pork + roe deer + moose for the meat portion of my diet (i do consider also adding fish but i have concerns with regard to mercury, etc).

Here in Sweden beef is very expensive relative to the quality. It's actually cheaper to buy game meat than higher end beef meat and i get the impression that game meat is very much superior besides not having enough fat if you are only going to eat that.

I have heard of some horror stories from people trying the carnivore diet, not sure how common those issues are though.

You can get vitamin C by eating meat that is red on the inside (medium, rare or even raw) but meat that is safe to eat when it's red on the inside tends to be expensive.

Macronutrients aren't end all be all. Fiber isn't end all be all. Micronutrients is where the real diet is. Fiber eaten before proteins helps with slowing the digestion. Fiber with carbs helps with absorption.
Hit micronutrient goals and don't worry about this or that diet.

Game meat > beef from store
Organs > pure meat
Get yourself some game meat liver and you're set for life
Learn to make jerky at home and have that as a snack

That's probably why i didn't find myself enjoying even higher end Beef. It's still inferior to Game meat (while also being more expensive here).

And in Sweden "grass-fed beef" isn't really a thing but even if it was it would obviously be inferior to game meat.

If i want more fat i could simply resort to some pork i got from a grocery store. Seems to work well enough and it taste fine (honestly i prefer it over beef).

I have so far not seen going above that would actually be beneficial.

I imagine eating a lot of fish would be very good if it wasn't for all the pollution. Fish could have been basically the ideal food but as of now i am not sure if i should begin eating it.

Yeah that's one of the major problems of this diet. Meat is incredibly resource and labor intensive to produce, and the really good cuts are only a small part of the animal, so its hard for those cuts to be cheap.

This diet is deficient in some macros which you'll have to supplement. Crucially, this includes fiber. I don't know how you supplement that without some sort of plant product.
Honestly I think the carnivore diet and its derivatives are idealistic, sort of rooted in this idea of a strong, dominant carnivore rather than any basis in reality. In reality, as long as you are leading an active lifestyle and eating an appropriate amount to supplement that, you'll be fine. I think you'll find that if you try doing that with meat alone you'll start feeling sick after a few months.
