Nothing. I personally dont get deli meats because they're relatively high cost compared to just the raw chicken and pork I usually purchase, and the deli meats are usually quite fatty. But turkey and chicken deli meats are relatively lean in that regard.

All the meats that you see at a deli that they put into a slicing machine and give you slices of are multiple parts of an animal that have been pureed with spices and thickeners added, and then set into a mold. You obviously have zero idea where your food comes from or how it's prepared. What you've described has never been done. It's unfeasible and it wouldn't work. Cost-wise or mechanistically.
