NTA but I will always fit drinking into my diet, I’ve done it before successfully, I’m doing it now successfully, and I will continue to maintain my TDEE while doing it in future.
I love going to bars and being social with friends and I’m not going to stop that for months just because I’m dieting. Diets fail because you completely abstain from things and fail to build lifelong habits, if I completely cut things out and then bring them all back when I get to my goal weight without learning moderation then my weight loss won’t be sustainable.
I’m not saying get on the beers every single night, and I’m not claiming it’s good for overall health, but if you get fucked up once a week on a saturday, drink only spirits with diet soda, have a clean, high protein meal beforehand, avoid drunk food and fast food when you’re hungover and stick to your workout and diet for the other 6 days of the week, it is completely fine from a caloric deficit standpoint.
If your willpower is too low to avoid all the pitfalls that come with it they’re not going to be any better when you’re lean.

I know it's a corny answer but the best workout routine is the one you consistently stick to. The only way you'll see results from working out is if you turn your routine in a habit that you never break. That matters more than how many days you do it or what your split is.
I would do whatever works best for your schedule. If you can only get in the gym two days, do an upper/lower split that is heavy on compound movements so you hit as many muscle groups as possible.
3 days a week, you could do a push/pull/legs or an upper/lower/full body
4 days, upper/lower/upper/lower, push/pull/legs/full body
Generally when you get in the 4+ territory you can start doing more targeted isolation exercises that focus on a single muscle group.

I feel like push/pull/legs is a good starting point for beginners. It's very balanced and not a huge time commitment. Then if you enjoy working out enough and have the time to spare, consider tweaking it to 4 days and changing your split around.

don't go below 2000 for macro and hunger management. add low intensity steady state cardio, long brisk walks every day, 30-45 min home trainer, it's going to melt. I have a similar physique but at 185 and 5'11, with 6-7 mile walks and 30-45 min home trainer plus lifting daily I'm losing 1.8 - 2.2 lbs / week at 2100. compound lifts are efficient because they train multiple muscles and a large % of your muscle mass in one multi joint movement

it doens't matter much if you train 3, 4, 5 or 6 days a week or how it is split, what matters is how much volume (sets) you do per week per muscle group.
it's best if the workout timing and routine fits your life and the times you can train.
For example if you have a longer drive to the gym you could train 3 days and do ~3-4 lifts on these days. If you are very busy during the day until late but have a home gym you could train in the morning on ~5-6 days and do ~2 lifts on these days. All of this is no problem as long as the same lift is spaced a bit apart if you do it more than once per week. The routines are not rigid, stuff like SS was mostly also developed with the intention to keep it simple and easy to follow

Things have been going well this week. Visited my grandmother on Monday and she was very sweet about the weight I've lost so far. She's been my number 1 fan my whole life so making her happy felt good.

Based on my autistic calculations and the graph it gives me, I am currently 18 pounds ahead of my projected loss.

Going through the TDEE calculator with Katch-McArdle Formula on sedentary and losing 2lbs per week puts my daily caloric intake at 899 which seems almost impossible.
Placing it on Mifflin St Jeor puts my daily caloric intake at 1358, which is certainly doable (I can be relatively comfortable at 1200/day from some time when I was losing weight in the past).

Yeah looks like you store more fat around your belly vs the rest of your body, I can tell because your shoulders are leaner than mine were at the same weight. So you will probably have more loose skin around your belly. Don’t let that stop you though.
