The only time I've ever had food poisoning is when it's come from someone who didn't know what the fuck they were doing (either a restaurant staffed with browns, or a retarded friend).I've eaten some foods that are left out overnight with no issue, but I do have a couple standard rules.1. If it smells off in any way shape or form, toss it with no hesitation. 2. If there is any way the food was slightly undercooked before it was originally served, reheat for several minutes before eating (preferably in a sealed environment like the oven for fuller coverage)3. If it was kept at room temp while sealed, it is ironically less likely to be safe to eat, so any indicators of risk should be heightened (even faint off smells are instant nope)4. Make note of any other improper handling techniques prior to eating (i.e., how was fresh veg stored or what might it have been exposed to during transport that may lead to doubt)5. Is the food intended to have a certain degree of bacterial content (i.e., fermented foods and cheeses)? If so, is there any other indication beyond smell that might increase risk (visible differences like discoloration or visible content separation)Probably completely arbitrary, but I handle 10lbs of raw chicken each week like a fucking retard, have a compromised immune system, and I've never had any issue with my foods in the 20 years since I learned to cook.
>>77102409I've had salmonella from Costco tomatoes many years b4 and it was actually quite minor, just some loose shits that came out kinda hot and frequently for a few days. Dysentery on the other hand was bloody and awful. Fried rice syndrome and vibrio are the real killers and why I never get restaurant rice or raw oysters anymore, always put vinegar in my own rice and get cooked or canned oysters.>t. reads a lot of microbiology literature

>>77104224Fried rice syndrome is a thing, but it's generally overblown. If you're keeping rice in the fridge, it's fine. I've eaten reheated day old rice that was left in the cooker pot loads of times. If it doesn't smell or have a gunk on it, it should be alright, but it is somewhat risky.
